Melany’s Recipes: 5 Fresh Cocktails

There’s nothing nicer than being outdoors on a summer night with a cocktail in hand.  Here are some of my favorites!

cocktail11. Spiked Peach Iced Tea

1 Cup unsweetened peach tea, 1 oz. vodka or peach vodka, 1 oz mint simple syrup or fresh mint and stevia muddled, peach slice for garnish.  So refreshing and so much fun. Want to step it up a notch, add a bunch of ice and put it in the Vitamix for a frozen drink.



cocktail22. Strawberry Lemonade Slurpee

1 packet lemonade kool-aid, ½ cup sugar, 2 cups of seltzer or club soda, 5 large straberries, 2 ½ cups of ice.  Place in blender and voila.  A fun barbeque drink for the whole family.










3. Low Calorie Mojito

2 oz light rum, 6 fresh mint leaves, 1 oz fresh line juice, 1 tsp sugar, 2-4 oz club soda. Lime wedge for garnish.

Drop mint leaves in the bottom of the cocktail glass, cover the mint with lime nad sugar and muddle.  Add ice, rum and stir. Top with club soda and then garnish with lime. Enjoy!

cocktail44. The easy quick party drink.  Yup, not a fancy name but here’s where it’s at. Take whatever fruit you have lying around, a cup of it (peaches, berries, etc…), 1 tsp of sugar, cup of ice, 1 cup lemonade (vodka if you like it that way!), put in blender or vitamix. Voila. Delicious, refreshing and quick!




cocktail55. Mocha Frappe

1 cup cold brewed espresso, 8 oz of milk (preferably frozen cubes but you can supplement with some regular ice cubes) 3 tbsp of light chocolate  syrup.  Place in blender. Enjoy!
